Whn barbecuing and the flames touch the meat - that's when carcinogenics with hard to remember names are created. You should barbecue such that the heat and the smoke cook the meat and not the fire itself. (Which is not what I thought... but I hardly barbecue anyways)
Source - Come Dine with Me Canada, that first contestant this week who is into holistic mumbo-jumbo and uses lasers to "decode" his food, whatever that means.
